Ingredients
For the Wings
- 1kg of Chicken Wings – trimmed
- 2 tsp sea salt
- 4 tsp baking powder
- 1/3 bottle of our Original Buffalo Hot Sauce
For the Blue Cheese Sauce
- 150g Sour Cream
- 75g Mayonnaise
- 125g Blue Cheese – crumbled into small pieces
- 1 tbsp Lemon Juice
- 1 tbsp Milk
- Salt & Pepper to taste
Method
Heat your oven to 120°C.
In a large bowl mix the wings with the salt and baking powder. Spread the wings out on an oiled wire rack in a baking tray so they are not touching each other.
Cook for 30 minutes on 120°C then increase the heat to 220°C and cook for another 30 minutes. The wings should be golden brown and crispy on the outside.
Remove from the oven and toss the wings with the buffalo hot sauce, we use around 1/3 of a bottle for 1kg of wings but be as liberal as you like depending on how spicy you like it!
While the wings are cooking make the blue cheese sauce by mixing all of the ingredients for the sauce together in a bowl.
