Cauliflower Shawarma


For the Cauliflower

  • 1 whole Cauliflower
  • 1/4 tin of our Shawarma Rub
  • Olive Oil
To Serve
  • Flat Breads
  • Hummus/Tzatziki
  • Hot Sauce
  • Pickles
  • Salad 
  • Rice/Couscous


  1. Preheat your oven to 180°C. Bring a large sauce pan 1/2 full of water to the boil. Put the cauliflower upside down into the boiling water and cook for 5 minutes. Carefully remove the cauliflower and leave to steam off for about 10 minutes.
  2.  Place the cauliflower into an ovenproof frying pan/dish and drizzle/rub the cauliflower with a good helping of olive oil followed by about 1/4 tin of our shawarma rub.
  3. Cook in the over for 30-45 minutes depending on the size of your cauliflower. The cauliflower will need basting/more olive oil drizzled over it every 10 minutes or so to stop the spices burning.
  4. Slice/pull the cauliflower apart and serve with salad items, flatbreads and rice/couscous/grain salad as preferred. Our Hot Tomatillo Salsa and Sweet Maple Aged Pickled Cucumbers pair well with this dish.

For the meat eaters out there the cauliflower can be replaced with chicken or lamb, rub the meat ideally overnight and cook depending on cut.
